In order to solve such a massive issue, you have to think outside the box. And nothing could be more outside the box then using mushrooms as a way to replace sugar in foods.
I set out on this mission to solve this global issue back in 2003 when I was diagnosed as a type II diabetic… At the time I thought what I was eating was healthy but found that sugar was hiding in nearly everything I ate.
I ended up partnering with a small team of experienced scientists and we made a discovery that would forever change the food industry for the better.
Let me explain:
The reason sugar is hiding in everything we eat is because of flavor defects. If you strip away the flavors and sweeteners from a product, you are left with the base ingredients which if you have ever tasted a product base before you know they can taste terrible.
Sugar is used to mask these undesirable flavors of a product base in order to make it taste good. Since sugar is cheap and effective you will find it in everything from your sauces, breads, juices, snacks and everything else you eat.
But we discovered something quite unique… We found that mushrooms have a unique ability to block the perception of bitterness. When you are able to block bitterness, you do not need to use sugar to overcome the undesirable flavors of the product base.
In this chocolate bar, our mushroom extract is able to reduce the sugar content in half! See over half the sugar of a regular chocolate bar is used to cover up the undesirable flavors of the cacao beans…
When we made this discovery we knew that in order to actually solve this global sugar epidemic we had to provide our mushroom extract to the major food companies around the world. Which the industry has embraced our ingredients and is currently creating all sorts of new products.
But new product development takes time, which is why we created this chocolate bar for you to taste what is possible today.
